Air France presents new desserts created by Nina Métayer in its Business Class cabin

Starting in April 2026, Air France will offer a new dessert collection in its Business Class for long-haul flights departing from Paris. The selection is the work of pastry chef Nina Métayer, who continues her collaboration with the airline following a partnership that began in 2024.

Recognized as the world's best pastry chef in 2023, Métayer designed a selection of creations specifically for in-flight consumption, taking into account flight conditions and the passenger's sensory experience. Among the new additions are two standout creations: a raspberry and coconut dessert, with a smooth and balanced profile, and another of lemon and verbena, fresh and delicate.

“I designed these desserts as true travel companions, with intense yet light flavors that evoke faraway destinations,” the chef noted. She explained that one of her creations combines coconut mousse, raspberry confit, and a thin layer of white chocolate, achieving a harmony between texture and flavor.

The culinary offerings are rounded out by menus developed by chef Régis Marcon, a three-Michelin-starred chef and Bocuse d'Or winner, who is in charge of the Business Class dining experience. His cuisine, inspired by his native region of Auvergne-Rhône-Alpes, seeks to combine local identity, quality ingredients, and sophistication.

To prepare the dishes, the chefs work alongside Servair using fresh, local, and seasonal ingredients. In line with its sustainability policies, Air France prioritizes products of French origin and responsible fishing, in addition to offering vegetarian options in all its cabins.

The airline also allows passengers to pre-select their main course up to 24 hours before the flight, a measure that not only guarantees availability but also helps reduce food waste on board.
