"Argentine cuisine grew a lot and still has enormous potential"

In dialogue with Travel2Latam, Edgardo Vieira, founding partner and manager of María Lujan Ristorante Tigre, analyzed the current situation of local gastronomy and highlighted the proposal of the establishment.

How was the proposal of María Luján Ristorante born? What does destiny mean to you?

Tigre is a destination that has a wide variety of options, it is not enough to stay a weekend to cover everything; It has boat rides, rowing classes, amusement park, casino, air park, gastronomic circuits of first level and lodging both on the island and on the mainland. In the case of the María Luján Ristorante we started in 2005 as a family project, delighted by the place and everything it conveys, and we continue to this day trying to merge the kitchen with the benefits of the place.

What is the current position of the restaurant in the Argentine market? And at the regional level?

We have a broad experience in the local market. We specialize in Mediterranean cuisine, which highlights river fish, seafood and artisan pastas. Our customers also highlight the service; we strive to provide a unique dining experience, so we are present in every detail. We have clients who choose us year after year and we receive a large number of tourists, both national and international.

Were affected by the economic and exchange policy of the current government? And of the previous management?

What affected us the most was the sharp increase in services. At the beginning, the consumption grew, but it did not last long; at this moment we are on a plateau waiting to be reactivated. During the previous administration we were considerably affected by inflation, we lost a lot of profitability and consumption was lower.

One of the worst hit sectors in the last time was gastronomy. How do you analyze the sector and the entrepreneurs of the sector at this time?

For several years, gastronomy has been hit hard. In this last time we learned that several restaurants closed their doors, so it is important to manage well and try to always have reservations for the most difficult times.

Did you make investments in the last time or do you plan to make them? They are ready to inaugurate an event hall also in Tigre. What is the objective of adding this proposal?

At this moment we are making an important investment to create an event room for social and business parties. So far, the city of Tigre and especially the area of ​​Paseo Victorica did not have a comprehensive quality proposal that can offer events of all kinds. For this reason, we started working in Terrazas María Luján, where each person will have options to choose according to their interests. A detail that we like to highlight is that the deck we built has an exclusive view of the river, ideal for receptions or any other activity that is part of the event.

What is your vision about Argentine gastronomy? What elements stand out in the proposal of María Luján Ristorante?

Argentine gastronomy grew a lot and still has enormous potential. In the María Luján we always follow the proposal of the Mediterranean cuisine, we differentiate ourselves by the elaboration of artisan pastas, we also try to merge typical foods of our zone of the delta and we count on river fish. Our customers highlight pasta and fish.

Last year they were awarded the Tigre de Oro 2017 award, what did this award mean to you? How do they work to sustain these standards?

We are extremely grateful and we greatly enjoy the recognition. The work of gastronomy implies effort and dedication, that's why we give the best to every client that enters our restaurant: service, attention and quality to make your experience unforgettable.
