This is Maito, by Panamanian chef Mario Castrellón, a space recognized for “combining Caribbean warmth with a design inspired by the Panama Canal, creating a welcoming and dynamic gastronomic space.”
Castrellón has revitalized the country's culinary scene, reaching the international sphere, being the first restaurant in Central America to achieve a position in this distinguished ranking in 2022.
In a recent interview with a local newspaper, celebrating the 15th anniversary of his restaurant, Chef Castrellón refers to his culinary offering as “Chombasia.” The term, based on the creolization of Panamanian food, is rooted in the influence of Afro-Antillean and Asian flavors that it possesses, and which has been recognized for its originality, creativity and culinary skill.
The Cantina del Tigre restaurant was also included in the list of The Latin America's 50 Best Restaurants 2024 for Panama. Among the best 100, announced preliminarily, were the restaurants “Fonda Lo que Hay”, La Tapa del Coco and Íntimo.
With this distinction, the country and its city continue to be a world-class gastronomic destination, always highlighting the mosaic of flavors that make it a UNESCO Creative Gastronomic City.
