Located in the countryside of Colonia del Sacramento, the Hotel Restaurante Comarca Las Liebres combines gastronomy, architecture and nature. Nestled in a topography and environment of natural beauty, it houses a park with centuries-old trees; the main house, dating back to 1920; the restaurant; hotels of maximum exclusivity; a 100% organic garden; a vineyard with two strains and its own real estate development.
The restaurant stands for Uruguayan home cooking with natural ingredients from organic gardens. It is characterised by following the KM 0 concept, where all its dishes are made with its own products or from small local producers. Conceptually, diners have access to a menu largely determined by the 100% certified organic garden. In addition, the complex offers a unique experience in the afternoon with its Tea, where the aromas of the infusions combine with the tranquillity of the surroundings and the freshness of the local ingredients.

At Las Liebres they support local wines, while offering their own examples. They have a 3,500 m² vineyard in the surroundings of the park. Las Liebres Cabernet Franc was their first experience, which was very well received; a fresh, aromatic wine that is very friendly to the emblematic dishes on the menu. It is currently made up of two particular strains: the well-known Merlot and Gamaret, a hybrid grape, a cross between the Gamay and Reichensteiner grapes, native to the canton of Vaud in Switzerland.

They promote the concept of “the habitable house”, which can be enjoyed in all four seasons of the year. Guests can enjoy an exclusive type of stay and pleasant and sophisticated atmospheres. In the main house, on the upper floor, there are two rooms: Juanita and Skyla. Both have access to a terrace with a privileged view, from which, on clear days, you can see the city of Buenos Aires. 30 meters from the main house, there is the Casa del Aljibe, which has been transformed into two rooms with fine rural architecture. On the other hand, with the possibility of accessing a private pool, the Casa de la Vendimia also has two rooms.
Las Liebres is the perfect venue for the organisation of a variety of events, including corporate events, weddings and other celebrations. It has three rooms: the Don Miguel Room, with capacity for 32 people; the English Room, which stands out for being classic and elegant; and the Restaurant Room, which is versatile for any type of visitor's need.
