Santa Marta will host the Magdalena Gastronomic Meeting
The event will celebrate its first edition on Thursday, December 3 at 7:30 pm at the Santa Marta Marriott Resort Playa Dormida
The evening will be led by the hotel's executive chef, Alirio Rodríguez, and will feature Fabián Rodríguez from the local restaurant Guasimo, as guest chef.
"During the meeting, attendees will be able to enjoy a six-course tasting menu through which we want to publicize the great pantry of the department of Magdalena through a menu with unique native flavors," said Fabián Rodríguez.
The tour of the Colombian coastal region will begin with a cashew paste from the banana zone, prawns, crispy quinoa, avocado, honey from the Sierra Nevada and roasted tomatoes.
It will continue with some croquettes of yucca dough and octopus stew, coconut milk chive cream and ahogao achiote and shrimp tartar.
As a third course, diners will savor homemade stew tail and spices, popcorn bean hummus and fried onion. Later, grilled octopus, banana step, mango and crispy aubergines with sourdough bread.
The evening will close with some cappuccino buns accompanied by Creole chicken and for dessert, a local seasonal fruit cake with artisanal coconut ice cream and pickled Jamaica flower.
About the chefs
The Colombian Alirio Rodríguez, has more than 25 years of experience in the gastronomy sector both in his native land and abroad. He has served as Executive Chef of the Marriot for Colombia for more than six years, his last and current position being that of Executive Chef of the Santa Marta Marriott Resort Playa Dormida.
Fabián Rodríguez, chef and businessman from Samarium, is one of the representatives of the new generation of Colombian chefs, a faithful promoter of Magdalena's gastronomy. Known for the use of ingredients from the region, his style defines it as "market cuisine" or "signature cuisine". His career is based on the hotel industry and research trips in countries such as France and Spain.
